    I work at a place near Cape cod ma and we have them on special rn, we just do lemon caper tartar, lettuce, tomato and onion on brioche, it Def startled me for a sec tho bc I had never encountered an entire crab on a sandwich, but thankfully the “soft shell” isn’t eggshell-like, as I had thought at first! 😆

    I served at a Cajun restaurant for a while and they served these, I could never bring myself to try them but they were popular

    Soft shell crabs- they molt their exoskeleton and are left vulnerable. The season is through the spring and many mark it by the first full moon of May.

    One of my first prep jobs at the age of 16 in a real kitchen was cleaning a few cases of these- cut off the the face, clip the gills/lungs, finish with the apron- don’t squeeze the “mustard” out. I remember thinking how all of them were watching me kill their friends in such a ruthless way.

    Soft shell crab Poboys are quite common here in New Orleans particularly this time of year (warmer months) when they molt and lose their shells.
